The culinary scene in Chengdu, Sichuan province, is buzzing with the latest street food sensation: grilled black sea moss. The unique delicacy, known for its black, hair-like appearance, has gone viral after capturing the attention of food enthusiasts.
Footage filmed on Thursday shows a barbecue restaurant cook grilling black moss and preparing other dishes for visitors as the restaurant's manager filmed the cooking process. Locals can also be seen trying the dish.
"The main steps are to first take the seaweed, then brush it with oil, sprinkle with sea pepper noodles, brush with soy sauce, then add some seasonings, and finally sprinkle with scallions and folded ear roots," explained the manager, Chen Yu.
Chen said that while dish doesn't taste 'particularly delicious,' its' peculiarness is what draws in 'curious' customers.
"My feeling is that this thing has never appeared before. It's a bit of a curiosity. Chengdu people are more relaxed and try everything out," he added.
Chen Yu shared that the dish was first created by a group of friends who 'liked to play with strange things.' After posting their unusual invention on social media, "they discovered that they were popular."
A visitor who came in to try the latest culinary trend said: "after seeing it online, I saw something quite close and thought it had its own unique features. I wanted to give it a try."
Black moss, also dubbed the 'hair vegetable,' transforms from a dry, hairy appearance to a black vermicelli-like texture in soup. In Chengdu, street food vendors have adopted the new, 'trendy' cooking technique for the sea moss, increasing its popularity.
