The tall ship is expected to draw hundreds of visitors to the Tsim Sha Tsui harbour, where it will be open to the public for guided tours until Tuesday.
"It's a very special boat so it's wonderful to see it docked in Hong Kong and going around the world. It's very nice for us to be able to come here and see it," a tourist from India said.
"The workmanship is amazing; you have, I don't know how many sails on this. I think it's 31 or 32 sails or something, so it's an incredible sailing ship," he added.
The ship, built in 2000, is reportedly 76 meters long and is operated by a crew of 30 people. It arrived in Asia for the first time in its history after setting sail from the Netherlands last August.
The Stad Amsterdam was last docked in Shanghai after calling in at Yokohama, Tokyo and Kobe in Japan. It will visit Sorong in Indonesia next as part of its voyage to Sydney in Australia.
