A handcraft bakery in Chinese prefecture-level city of Nanning is using innovative approach for creating the seasonal delicacy called mooncake.

Footage filmed on Friday shows pastry chef cooking mooncakes of different shapes including a lotus flower, a pumpkin, and a phoenix crown.

Bakery shop owner Huang Chenrui explained that since 2021 she started to remould traditional pastry, adding new elements and styles because the common Cantonese-style mooncakes started to feel 'very ordinary and nothing special'.

"We have always insisted on using handmade mooncakes. For example, the mooncake in the shape of a dragon fish that we made is all hand carved, the dragon horns are hand kneaded, and the dragon eyes are hand drawn by our pastry chef. This means that we need to be skilled in both art and design, as well as have aesthetic ability," pastry chef shared.

Huang Chenrui added the preparations for the Mid-Autumn Festival started in June when bakers created two new lines of the product design.

"Dragon and Phoenix Bring Auspiciousness would be more suitable for middle-aged people because the colour scheme would be more festive. Harmony is Precious would be more suitable for young people, looking more dynamic in appearance," the bakery shop owner explained.

With the seasonal festivities fast approaching, the shop is producing around 6,000 mooncakes per day. However, the handcrafted nature means long production times, often taking up to seven days for a complete gift box. This has led to some delays, but the demand remains high, with customers lining up to secure their orders.

Looking ahead, Chenrui plans to expand her offerings, incorporating traditional Chinese culture into pastries for weddings, birthdays, and other special occasions.
